ince colonial times, boiled cider has been a traditional New England sweetener used for baking and flavoring. It's a dark brown syrup with an intense apple flavor, and a surprising snap to the taste which balances the sweetness.

Boiled cider is made in the same manner as maple syrup. The fresh cider is placed in a wood-fired evaporator and slowly simmered to boil off the water. It takes nearly a gallon of cider to produce a single pint of boiled cider. Nothing else is added; it's strictly the pure concentrated cider.

Use it as a topping for pancakes, waffles, or ice cream. Or as an ingredient for traditional New England recipes such as baked beans, squash, mincemeat, and fruitcake. (See the Recipes section of this site for more information.)
