olklore has the Roussette grape being brought back as seeds from Cyprus during the Crusades. However it arrived, today it produces an exciting white wine, with an excellent balance of acidity and an exotic nose, that's well worth aging. The first taste is a pleasant melange of competing flavors, between tropical fruit and the more familiar pomme tastes of pears and apples.

It's best enjoyed lightly chilled, not cold, with a main course of lighter seafood (scallops, perch, cod, squid), or calf, rabbit, or hen; essentially non-greasy meals where the wine's nose and the food complement each other. And of course, it's a pleasure with cheese as an appetizer, or with a light dessert.

Denis and Didier Berthollier are the next generation of vignerons working the land established by their forebears a century ago. They're balancing modern viticulture and vinification methods with traditional practices in their operation, and their wines are being recognized for it.
