ondeuse is an indigenous red grape variety grown almost exclusively in the Haute-Savoie, yielding a wine of deep color and tartness. The wines have clear black pepper notes and moderate to high tannins.

When young, they exhibit a freshness that's been likened to a "Beaujolais-Nouveau" with much more finesse. These wines definitely benefit from extended cellar aging, to mitigate the freshness and round out the acids and tannins. But even relatively young, they pair well with meats in sauce, tarts of potatoes and onions, charcuterie, and most rich soft cheese.

Denis and Didier Berthollier are the next generation of vignerons working the land established by their forebears a century ago. They're balancing modern viticulture and vinification methods with traditional practices in their operation, and their wines are being recognized for it.
